Yield:
4 servings

Ingredients:

  1. 4 boneless center loin chops
  2. 1/3 cup plus 1 tablespoon vinegar, divided
  3. 3 tablespoons soy sauce
  4. 3 cloves garlic, minced
  5. 1 1/2 teaspoons cornstarch
  6. Glaze:
  7. Thickener:
Directions:

Glaze:
In a bowl, combine 1/3 cup vinegar, soy sauce and garlic to make a glaze; set aside.

Thickener:
In a bowl, combine the cornstarch and remaining 1 tablespoon vinegar and stir until smooth; set aside.

In a large skillet, over medium heat, brown pork chops on both sides, 1 minute per side. Pour the glaze over the chops.

Continue cooking for 4 minutes then flip and swirl around in the glaze and rearrange so chops are cooking evenly on all edges.

Continue to cook for 3 additional minutes. Test the smallest pork chop first with an instant digital meat thermometer. The pork chops will be done at 145 degrees F

Remove the chops and let rest for 8 to 10 minutes.

Add thickener to the glaze in the pan and stir for 1 minute or until thickened. Pour over the chops and serve.
